Patch Farmstead grows Berkshires and crosses of Tamworth, Yorkshire, and Berkshire pigs on pasture.
Everyone has at least some Berkshire. We decided on Berkshire as the base for our herd based on the quality of the pork they produce. Our pigs are born and raised on the farm, from day one receiving the best care and freedom to roam. By the time they are ready for processing, they are anywhere from 180 - 400 pounds. Hogs are not sold by their live weight, however. We sell them by their "hanging" weight, which is the total weight after they have been slaughtered and are ready to be processed. Hanging weight is generally 70-75% of live weight. Live weights are estimates, but we can get pretty close.
$4.00/lb is what you pay the farm for hanging weight before processing. In general, processing will cost you somewhere in the neighborhood of $1 - $1.05 per pound depending on which processor you choose. Popular choices are Acre Station in Pinetown, NC (here), and Wells Pork in Burgaw, NC (here). You pay the processor for your cuts per pound, as well as any additional items you choose like having spices added to sausage or having hams smoked.
